3 Primary Types of Chocolate

Now that you know the history, here are the basics on chocolate. There are 3 chocolate variants:

  1. Bittersweet or Semi Sweet (Dark) Chocolate : Sweetened chocolate with a minimum cocoa bean or chocolate liquor content of 35% by weight, and which may contain up to 12% milk solids. Dark chocolate is the latest rage, often preferred by adults with equally sophisticated food palates. 
  2. Milk Chocolate : Contains a minimum of 10% by weight of chocolate liquor, at least 3.39% milk fat, and a minimum of 12% milk solids (inclusive of milk fat). 
  3. White Chocolate : A sweet ivory-colored confection that contains by weight at least 20% cocoa butter, at least 14% milk solids, and at least 3.5% milk fat, and no more than 55% sweeteners.

3 Historical Facts about Chocolate

A 2000 year old journey from the jungles of Central America as a medication to pure indulgence, chocolate is a sinful food many of us swear by. Beyond all the known benefits of Chocolate to be good for memory, sex drive, tooth health, mood and long life, there are many new benefits of it being validated by researchers as we speak.Chocolate has inspired artists, kings, general people; used in rituals and traced its path from its humble beginnings to across the world and may be in a way thanks to Colonial rule & Globalization :)

In this series on Chocolate I intend to take you on trip of 'Enlightement' on - your and mine - chocolate. Let thy be 'Chocolated' !!

Here are three interesting historical facts about chocolate to start with:

1662, Rome Takes Another Look: As chocolate became exceptionally fashionable,The Church of Rome took a second look at this bewitching beverage. The judgment: "Liquidum non frangit jejunum," reiterated that a chocolate drink did not break the fast. But eating chocolate confections didn’t pass muster, until Easter. Is this where the Easter Bunny makes an entrance?

1830, The Drink Became a Confection: Solid eating chocolate was developed by J. S. Fry and Sons, a British chocolate maker.

1938, World War II: The U.S. government recognized chocolate's role in the Allied Armed Forces. It allocated valuable shipping space for the importation of cocoa beans which would give many weary soldiers the strength to carry. Today, the U.S. Army D-rations include three 4-ounce chocolate bars. Chocolate has even been taken into space as part of the diet of U.S. astronauts.
